When you can't get out of bed, but you need to eat something. This bowl combines slow-release carbs, protein, and omega-3s to gently lift mood without the sugar crash.
Ingredients
- 1 cup cooked quinoa or brown rice
- 1 can salmon or tuna (or 2 hard-boiled eggs)
- 1/2 avocado, sliced
- Handful of spinach or arugula
- 1 tbsp olive oil
- Squeeze of lemon
- Pinch of sea salt
- Optional: pumpkin seeds, walnuts, or feta
Steps
- 1Warm the quinoa in a bowl (microwave 30 sec is fine).
- 2Add greens, salmon, and avocado on top.
- 3Drizzle with olive oil and lemon.
- 4Season with salt.
